Ingredients
Scale
Main Ingredients
- 1 bunch asparagus (about 12-16 ounces), ends trimmed
- 1 tablespoon extra virgin olive oil
- Kosher salt, to taste
- Pepper, to taste
- 2 sheets frozen puff pastry, thawed
- 8 ounces Gruyere cheese, shredded
- 12 slices prosciutto
- 1 egg, beaten
Instructions
- Preheat the Oven: Preheat your oven to 425°F and line a sheet pan with parchment paper to prevent sticking and make cleanup easier.
- Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheets into a large rectangle about double their original size. Trim the edges to square them off and cut the dough into 6 even squares using a pizza cutter or knife.
- Season Asparagus: Toss the asparagus spears in extra virgin olive oil, and season with kosher salt and freshly ground pepper to taste.
- Assemble Bundles: Place one slice of prosciutto on each puff pastry square, folding it in half if necessary to fit. Add 3-4 asparagus stalks per square, depending on their size, followed by 1-2 tablespoons of shredded Gruyere cheese.
- Wrap and Seal: Lift two opposite corners of the puff pastry square and wrap them around the asparagus, pressing gently to seal the edges and form bundles. Brush the tops with the beaten egg wash to achieve a golden finish. Optionally, sprinkle with additional salt and pepper.
- Bake: Place the bundles on the prepared sheet pan and bake in the preheated oven until the puff pastry is golden and puffed, approximately 15 minutes.
- Serve: Remove from oven and serve the asparagus puff pastry bundles immediately while warm and flaky.
Notes
- Ensure puff pastry is thoroughly thawed to prevent cracking while rolling.
- Use a sharp knife or pizza cutter for clean, precise pastry squares.
- You can substitute Gruyere with another melting cheese such as Swiss or Fontina.
- For vegetarian option, omit the prosciutto or replace with roasted red peppers.
- Serve warm for best flavor and flaky texture.
