Description

Delicious and moist Banana Bread Mini Muffins made with ripe bananas and mini chocolate chips, perfect for a sweet snack or breakfast treat.

Instructions

  1. Mix butter and sugar: In a large bowl, combine the melted butter and sugar, stirring until well blended.
  2. Add eggs: Crack the eggs into the mixture and beat thoroughly to incorporate.
  3. Mash bananas and add lemon juice: In a separate bowl, mash the very ripe bananas and stir in the lemon juice, then add this to the wet mixture, mixing well.
  4. Add dry ingredients: Sift together the flour, baking powder, and salt, then gradually add them to the wet ingredients, stirring until just combined.
  5. Fold in chocolate chips: Gently stir in the mini chocolate chips into the batter.
  6. Prepare muffin pans: Grease a mini muffin pan and spoon the batter into the wells, filling about ¾ full. Sprinkle extra mini chocolate chips on top.
  7. Bake: Place the pan in a preheated oven at 350 degrees Fahrenheit and bake for 18 minutes, or until the edges are golden brown and the tops are no longer moist.
