Description

This Berry Galette is a rustic, easy-to-make dessert featuring mixed berries baked in a flaky pie dough crust. With a balance of sweet and tart flavors enhanced by lemon zest and vanilla, it’s perfect served warm with vanilla ice cream or whipped cream.

Ingredients

Scale

Filling

  • 2 cups mixed berries (blueberries, raspberries, blackberries, strawberries, chopped)
  • ¼ cup granulated sugar
  • 1 Tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 Tablespoon lemon juice
  • 1 teaspoon vanilla extract

Crust

  • 1 sheet store-bought pie dough or homemade, chilled
  • 1 egg (for egg wash)
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat Oven: Preheat your oven to 400°F and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Prepare the Filling: In a mixing bowl, combine the mixed berries, ¼ cup granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Stir gently until all the berries are evenly coated with the mixture.
  3. Roll Out Dough: Place the pie dough sheet on a parchment-lined surface. If necessary, roll it out slightly to form a 12-inch circle ensuring even thickness.
  4. Assemble: Spoon the prepared berry filling into the center of the dough, leaving a 2-inch border around the edges. Fold the edges of the dough over the berries, pleating as you go to create a rustic edge while leaving the center exposed.
  5. Apply Egg Wash: Beat the egg lightly and brush it over the folded dough edges to help the crust develop a golden, glossy finish during baking.
  6. Finish & Bake: Sprinkle coarse sugar over the egg-washed crust edges to add texture and sweetness. Bake the galette on the prepared baking sheet for 35 minutes or until the crust turns golden brown and the berry filling is bubbling.
  7. Cool & Serve: Allow the galette to cool for at least 10 minutes so the filling thickens slightly. Serve warm, ideally accompanied by vanilla ice cream or whipped cream for added indulgence.

Notes

  • Use fresh or frozen berries; if using frozen, do not thaw to prevent excess liquid.
  • For a gluten-free option, substitute the pie dough with a gluten-free crust.
  • Adjust sugar amounts based on the sweetness of your berries.
  • Let the galette cool properly before slicing to avoid a runny filling.
  • Store leftovers covered in the refrigerator and consume within 2 days.
