Instructions
- Prepare the batter: In a large bowl, combine the corn kernels, all-purpose flour, paprika, cayenne pepper, granulated sugar, baking powder, kosher salt, and freshly ground black pepper. Stir well to evenly distribute all dry ingredients.
- Add wet ingredients: Add the beaten eggs and whole milk to the dry mixture and stir until the batter is smooth and combined. Gently fold in the chopped green onion and grated cheddar cheese until evenly distributed.
- Heat the oil: Place a skillet over medium heat and add enough vegetable oil to generously coat the bottom of the skillet. Heat until the oil is shimmering but not smoking, indicating it’s hot enough for frying.
- Cook the fritters: Drop the fritter batter by 2 tablespoon portions into the hot skillet, then flatten each slightly with the back of a spoon. Cook for 3 to 4 minutes on each side, or until the fritters are golden brown and crispy.
- Drain and serve: Work in batches, avoiding overcrowding the skillet. Once cooked, transfer fritters to a paper towel-lined plate to drain excess oil. Serve warm as a snack or side dish.
