Description

  • 2 cups shredded chicken (rotisserie works great)

  • 1 tsp dried parsley or fresh parsley


Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit and lightly spray a 9×5 or 8×8 inch baking dish with cooking spray, then set it aside.
  2. Slice Zucchini: Using a mandolin or a large chef’s knife, slice the zucchini lengthwise into ⅛-inch thick slices until you have about 12 slices.
  3. Assemble Roll Ups: Place shredded chicken over each zucchini slice, then top with 1 tablespoon of Alfredo sauce. Roll up each slice tightly and arrange them seam side down in the prepared baking dish.
  4. Add Sauce and Cheese: Pour the remaining Alfredo sauce evenly over the roll ups, then sprinkle shredded mozzarella and shaved Parmesan cheese on top.
  5. Bake: Bake in the preheated oven for 25 minutes or until the sauce is bubbly and the zucchini slices are fully cooked and tender.

  • Rotisserie chicken is a great shortcut but cooked shredded chicken works well too.
