Instructions
- Prepare Peanut Butter Mixture: Use a stand or hand mixer to beat together the creamy peanut butter, salted butter, granulated white sugar, and salt in a medium-sized mixing bowl until fully combined.
- Add Powdered Sugar: Gradually beat in the powdered sugar on a low setting until you form a soft dough.
- Prep Sheet Pan: Line a large sheet pan that fits in your freezer with parchment paper for easy cleanup and to prevent sticking.
- Form Sandwiches: Scoop out ½ tablespoon of the peanut butter mixture and roll into a ball. Using two mini twist pretzels, create a sandwich by gently pressing the pretzels around the peanut butter ball to make a ½ inch thick sandwich. Repeat to make about 36 sandwiches.
- Freeze Sandwiches: Place the sandwiches on the prepared sheet pan and freeze for 30 minutes to set. Alternatively, refrigerate if freezer space is limited.
- Melt Chocolate: Place dark chocolate chips in a microwave-safe bowl and microwave in 15-second increments, stirring between each, until fully melted (about 2-3 minutes total).
- Dip Sandwiches in Chocolate: Dip each peanut butter pretzel sandwich halfway into the melted chocolate. Place back onto parchment paper and sprinkle with sea salt if desired.
- Set Chocolate: Return the dipped sandwiches to the freezer for 15 minutes to allow the chocolate to set.
- Serve or Store: Serve immediately chilled, or store in the refrigerator in an airtight container until ready to serve.
