Description

Delicious and easy-to-make Peanut Butter Pretzel Bites featuring creamy peanut butter sandwiched between mini twist pretzels, dipped in rich dark chocolate and optionally garnished with sea salt. Perfect as a sweet and salty snack or dessert treat.

Ingredients

Scale

Peanut Butter Mixture

  • ½ cup creamy peanut butter
  • 3 tbsp salted butter, softened
  • 2 tbsp granulated white sugar
  • ½ tsp salt
  • ¾ cup powdered sugar

Assembly

  • 72 mini twist pretzels

Chocolate Coating

  • ¾ cup dark chocolate chips
  • Sea salt, optional garnish

Instructions

  1. Prepare Peanut Butter Mixture: Use a stand or hand mixer to beat together the creamy peanut butter, salted butter, granulated white sugar, and salt in a medium-sized mixing bowl until fully combined.
  2. Add Powdered Sugar: Gradually beat in the powdered sugar on a low setting until you form a soft dough.
  3. Prep Sheet Pan: Line a large sheet pan that fits in your freezer with parchment paper for easy cleanup and to prevent sticking.
  4. Form Sandwiches: Scoop out ½ tablespoon of the peanut butter mixture and roll into a ball. Using two mini twist pretzels, create a sandwich by gently pressing the pretzels around the peanut butter ball to make a ½ inch thick sandwich. Repeat to make about 36 sandwiches.
  5. Freeze Sandwiches: Place the sandwiches on the prepared sheet pan and freeze for 30 minutes to set. Alternatively, refrigerate if freezer space is limited.
  6. Melt Chocolate: Place dark chocolate chips in a microwave-safe bowl and microwave in 15-second increments, stirring between each, until fully melted (about 2-3 minutes total).
  7. Dip Sandwiches in Chocolate: Dip each peanut butter pretzel sandwich halfway into the melted chocolate. Place back onto parchment paper and sprinkle with sea salt if desired.
  8. Set Chocolate: Return the dipped sandwiches to the freezer for 15 minutes to allow the chocolate to set.
  9. Serve or Store: Serve immediately chilled, or store in the refrigerator in an airtight container until ready to serve.

Notes

  • Store pretzel bites in an airtight container in the refrigerator for 1-2 weeks.
  • Freeze pretzel bites in a freezer-safe container for up to three months; serve frozen or thaw in refrigerator before serving.
  • Use mini twist pretzels for best results; avoid pretzel sticks or rods as they don’t form good sandwiches.
  • Line sheet pans with parchment paper to prevent sticking and simplify cleanup.
  • If all sandwiches don’t fit on one sheet pan or in the freezer, use multiple smaller sheet pans.
