  • 1 cup (approximately 1 large) red apple, peeled and roughly chopped
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 ml (1/2 cup) vegetable oil or flavourless oil
  • 120 ml (1/2 cup) Greek yogurt

Cinnamon Topping

  • 50 grams (1/4 cup) caster sugar or granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter, melted

Sugar Glaze

  • 30 grams (1/4 cup) icing sugar or powdered sugar, sifted
  • 1-2 tablespoons milk

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 180 C (350 F) standard or 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and sugar. Add the peeled and roughly chopped apple and stir briefly to evenly distribute.
  3. Combine Wet Ingredients: In a separate bowl, whisk the eggs, vanilla extract, vegetable oil, and Greek yogurt just enough to break up the egg yolks and mix together.
  4. Mix Batter: Add the wet ingredients to the dry ingredients and gently stir with a wooden spoon until combined. Avoid overmixing to keep the cake tender. Pour the batter evenly into the prepared cake pan.
  5. Prepare Cinnamon Topping: In a small bowl, mix together the caster sugar, ground cinnamon, and melted butter until the mixture is lumpy and moist. Sprinkle this topping evenly over the cake batter.
