Description

Cowboy Butter Roasted Corn is a flavorful and easy-to-make side dish featuring tender corn sections roasted in a rich, savory cowboy butter and finished under the broiler for a golden brown finish. Garnished with fresh parsley, this recipe delivers a perfect balance of buttery goodness and fresh herbs that complement any meal.

Ingredients

Scale

Corn

  • 4 ears corn, husked and carefully cut into 1 1/2-inch sections

Cowboy Butter

  • 1 recipe cowboy butter, melted

Garnish

  • parsley, chopped for garnish

Instructions

  1. Preheat and prepare: Preheat your oven to 425°F. Line a large baking sheet with aluminum foil, making sure to leave enough foil at the ends to create a secure packet around the corn.
  2. Coat the corn: Place the corn sections on the foil-lined baking sheet. Brush each piece thoroughly with the melted cowboy butter to ensure all sides are generously coated.
  3. Wrap the corn: Wrap the corn sections tightly in the aluminum foil to form a sealed packet, locking in the moisture and flavor.
  4. Roast the corn: Place the foil packet on the baking sheet in the oven and roast for 30 minutes to allow the corn to cook through and soak up the butter flavors.
  5. Broil for finish: Carefully open the foil packet and remove the corn. Set your oven to broil. Place the corn under the broiler for 10 minutes, turning halfway through, until the corn is golden brown and slightly charred.
  6. Final coat and garnish: Remove the roasted corn from the oven. Brush each section again with any remaining warm cowboy butter. Sprinkle chopped parsley over the corn for a fresh and colorful finish before serving.

Notes

  • Air Fryer Option: Brush corn sections with melted cowboy butter and air fry at 400°F for 12 minutes in a single layer, working in batches if necessary. Then brush with more butter and garnish with parsley.
  • Grilling or microwaving are also viable methods for this recipe if you prefer an alternative cooking style.
  • Reheat the cowboy butter if it cools and solidifies before brushing the second time to maintain a smooth buttery texture.
  • Be careful when opening the foil packet after roasting as steam will be hot.
