Description

Creamed Chicken Over Biscuits is a comforting dish featuring tender chicken in a creamy tarragon sauce with peas, served over fluffy homemade country biscuits. Perfect for a cozy meal, this recipe combines a rich, velvety sauce with savory flavors and easy-to-make biscuits.

Ingredients

Scale

Sauce and Chicken

  • 4 tablespoons unsalted butter
  • 1 small onion, diced
  • 1/4 cup all purpose flour
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup chicken stock
  • 1 1/2 cups half-and-half (or whole milk or heavy cream)
  • 1 teaspoon dried tarragon
  • 1/2 cup peas
  • 1 pound cooked chicken, diced or shredded

Biscuits

  • 8 Homemade Country Biscuits (or biscuits of your choice)

Instructions

  1. Melt Butter: Melt 4 tablespoons of unsalted butter in a large deep skillet over medium heat until fully melted and hot.
  2. Cook Onions: Add the diced onion to the butter and cook, stirring occasionally, until the onions are translucent and beginning to brown slightly, about 5 minutes.
  3. Add Flour and Seasoning: Stir in 1/4 cup all purpose flour and season with salt and pepper to taste, mixing well to combine into a roux.
  4. Add Chicken Stock: Pour in 1/2 cup chicken stock gradually while stirring to blend the flour completely with the liquid, preventing lumps.
  5. Add Half-and-Half: Slowly pour in 1 1/2 cups half-and-half while stirring continuously. Raise the heat slightly and continue to cook, stirring constantly, until the sauce thickens, about 2 minutes.
  6. Combine Remaining Ingredients: Stir in 1 teaspoon dried tarragon, 1/2 cup peas, and 1 pound cooked chicken. Cook for a few more minutes until everything is warmed through. Taste and adjust salt and pepper as needed.
  7. Serve: Spoon the creamy chicken mixture generously over 8 homemade country biscuits or biscuits of your choice. Serve immediately.

Notes

  • For convenience, use rotisserie or leftover chicken to save time.
  • Refrigerated or frozen biscuits can be used instead of homemade biscuits.
  • If half-and-half is not available, use whole milk, heavy cream, or a 50/50 mixture of milk and cream.
  • Store leftovers in an airtight container in the refrigerator and consume within 3-4 days.
  • When reheating leftovers, ensure the mixture reaches an internal temperature of 165°F for safety.
