Description

A comforting and creamy chicken gnocchi recipe featuring tender diced chicken, soft gnocchi, and a rich cream cheese sauce with garlic, spinach, and Parmesan.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 30 g (2 tablespoons) unsalted butter
  • 350 g (12 oz) chicken breast, diced
  • 4 garlic cloves, minced
  • 75 ml (⅓ cup) dry white wine
  • 1 teaspoon Italian seasoning mix
  • 400 ml (1 ½ cups) chicken stock
  • 180 g (6.3 oz) cream cheese
  • 500 g (1 lb) gnocchi
  • 100 g (3.5 oz) baby spinach, roughly shredded
  • 30 g (¼ cup) grated Parmesan
  • Freshly ground black pepper
  • Salt to taste

Instructions

  1. Heat oil and butter: Heat the olive oil in a large, deep pan. Add the unsalted butter and allow it to melt completely until it starts foaming.
  2. Cook chicken: Add the diced chicken breast to the pan and cook over medium heat for 4-5 minutes until the chicken is golden brown and cooked through.
  3. Sauté garlic: Stir in the minced garlic and continue cooking for another minute until fragrant and aromatic.
  4. Add wine and seasoning: Pour in the dry white wine and cook for 1-2 minutes to let most of the alcohol evaporate. Then stir in the Italian seasoning mix and chicken stock, bringing the mixture to a simmer.
  5. Create creamy sauce: Once the stock is gently simmering, add the cream cheese in portions. Break it down with a spoon and stir continuously until the sauce is smooth and creamy.
  6. Cook gnocchi and spinach: Add the gnocchi and shredded baby spinach to the pan. Cover with a lid and cook for 3-5 minutes until the gnocchi is tender and the spinach is wilted.
  7. Finish and serve: Turn off the heat and stir in the grated Parmesan cheese. Season with freshly ground black pepper and salt to taste. Serve immediately for best flavor and texture.

Notes

  • Use fresh or store-bought gnocchi depending on convenience; fresh gnocchi cooks faster.
  • Substitute cream cheese with mascarpone or heavy cream for a different creamy texture.
  • White wine can be replaced with additional chicken stock if you prefer a non-alcoholic version.
  • For extra flavor, add a pinch of red pepper flakes with the garlic.
  • Ensure the chicken is cooked thoroughly before adding the cream cheese to avoid any undercooked meat.
  • Leftovers can be stored in the refrigerator and reheated gently on the stovetop or microwave.
