- 500 g (1 lb) gnocchi
- 100 g (3.5 oz) baby spinach, roughly shredded
- 30 g (¼ cup) grated Parmesan

- Heat oil and butter: Heat the olive oil in a large, deep pan. Add the unsalted butter and allow it to melt completely until it starts foaming.
- Cook chicken: Add the diced chicken breast to the pan and cook over medium heat for 4-5 minutes until the chicken is golden brown and cooked through.
- Sauté garlic: Stir in the minced garlic and continue cooking for another minute until fragrant and aromatic.
- Add wine and seasoning: Pour in the dry white wine and cook for 1-2 minutes to let most of the alcohol evaporate. Then stir in the Italian seasoning mix and chicken stock, bringing the mixture to a simmer.
- Create creamy sauce: Once the stock is gently simmering, add the cream cheese in portions. Break it down with a spoon and stir continuously until the sauce is smooth and creamy.
- Cook gnocchi and spinach: Add the gnocchi and shredded baby spinach to the pan. Cover with a lid and cook for 3-5 minutes until the gnocchi is tender and the spinach is wilted.
- Finish and serve: Turn off the heat and stir in the grated Parmesan cheese. Season with freshly ground black pepper and salt to taste. Serve immediately for best flavor and texture.
