  • 3 cloves garlic, minced
  • 1 teaspoon red pepper chili flakes

Sauce & Add-ins

  • 13.5 ounce can coconut milk, light or full fat
  • 1/2 cup water
  • 1 teaspoon salt, or to taste
  • 5 ounces baby spinach
  • 3/4 cup vegan parmesan cheese (Violife brand)


Instructions

  1. Cook the pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the sausage and aromatics: While the pasta cooks, heat olive oil in a large pan over medium-high heat. Add the sliced or chopped vegan sausage, chopped onion, minced garlic, and red pepper chili flakes. Cook for about 5 minutes, stirring occasionally, until the onion is translucent and the sausage is browned.
  3. Prepare the sauce: Reduce heat to low and pour in the coconut milk and water. Stir well to combine.
  4. Add spinach and seasoning: Stir in the baby spinach and cook for a few minutes until the spinach wilts. Add salt to taste, stirring to incorporate.
  5. Combine pasta and sauce: Add the cooked and drained pasta to the pan with the sausage mixture. Stir thoroughly to combine all ingredients evenly.
