Instructions
- Prepare the Breading: In a medium-sized bowl, combine the panko breadcrumbs, grated parmesan cheese, onion powder, Italian seasoning, kosher salt, and fresh cracked black pepper. Stir well and set aside.
- Slice the Zucchini: Trim the ends off the zucchini and discard. Slice the zucchini into ⅛-inch thick rounds. For thicker slices, increase cooking time accordingly.
- Make Egg Wash: In a small bowl, whisk together the large egg and half and half until fully incorporated.
- Bread the Zucchini: Dip each zucchini slice into the egg mixture, then coat it thoroughly in the breadcrumb mixture. Place the coated slices onto a parchment-lined baking sheet. Repeat with remaining slices.
- Prepare Air Fryer: Remove the air fryer basket and spray it lightly with non-stick cooking spray. Preheat the air fryer to 400°F for 3 minutes.
- Air Fry the Zucchini: Arrange the breaded zucchini slices in a single layer in the air fryer basket without overlapping. Generously spray the tops with non-stick cooking spray. Cook for 10 minutes. If using thicker slices, add additional cooking time as needed. You may need to cook in batches to avoid overcrowding.
- Serve: Remove the crispy zucchini from the air fryer and serve immediately while hot for the best texture and flavor.
