Instructions

  2. Prepare for Slow Cooking: Place the seasoned chicken in the slow cooker. Add the sliced red and green bell peppers, sliced onion, and pour in the low-sodium chicken broth. Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender.
  3. Shred the Chicken: Carefully remove the chicken breasts from the slow cooker. Using two forks, shred the chicken into bite-sized pieces, then return the shredded meat back to the slow cooker with the vegetables and broth.
  4. Add Cream Cheese and Parmesan: Stir in the cubed cream cheese and shredded Parmesan cheese until fully melted and the sauce becomes creamy. Let it cook an additional 10–15 minutes on low heat to meld the flavors.
