Instructions

  1. Prepare the Dates: Use a small sharp knife to cut a slit lengthwise in each Medjool date and carefully remove the pits, creating space for the filling.
  2. Fill the Dates: Spoon 1 teaspoon of peanut butter into each pitted date, then sprinkle 1 teaspoon of crushed roasted peanuts on top. Set the stuffed dates aside on a plate.
  3. Melt the Chocolate: Place the dark chocolate chunks in a microwave-safe bowl. Microwave in 30-second intervals, stirring well between each interval until the chocolate is fully melted and smooth.
  4. Dip the Dates in Chocolate: Insert a toothpick into each stuffed date for handling. Dip each date into the melted chocolate, using a spoon to coat completely. Let excess chocolate drip off before placing the date onto a parchment-lined tray.
