Apple Pie Filling:

  • 8 Granny Smith apples thinly sliced to ¼ inch thick
  • ¼ cup brown sugar
  • 2 teaspoons cinnamon
  • 1 lemon juiced
  • 3 tablespoons cornstarch
  • ½ cup water divided

Crust:

  • 2 homemade or store-bought rollout vegan pie crusts
  • Neutral oil to coat the baking dish

Streusel Topping:

  • 1 cup old-fashioned rolled oats
  • ½ cup brown sugar packed (light or dark)
  • ¾ cup all-purpose flour
  • ¼ teaspoon cinnamon
  • ½ cup vegan butter diced and chilled


Instructions

  1. Cook the apples: Add the apples, brown sugar, cinnamon, lemon juice, cornstarch, and ¼ cup water into a large pot with a lid. Gently mix to combine without breaking the apples. Cover with the lid and cook over medium-low heat for 5 minutes.
  2. Finish the filling: Add the remaining ¼ cup water to the pot. Stir well until all ingredients are fully incorporated and the mixture starts to thicken. Cover again, reduce heat to low, and cook for an additional 5 minutes, stirring occasionally to prevent sticking or burning. Remove from heat and allow the filling to cool.
  3. Prepare the baking dish and crust: Lightly oil a 9×13 inch baking dish. Place one pie crust into the dish and trim any excess dough, setting it aside for later use.
  4. Make the streusel topping: In a medium bowl, combine oats, brown sugar, flour, cinnamon, and chilled vegan butter. Use your hands to mix until the mixture forms clumps. Set aside.
  5. Assemble the bars: Preheat the oven to 350 degrees Fahrenheit. Spread the cooled apple filling evenly over the bottom crust. Cover with the second pie crust, trim and save any excess dough. Dice the extra dough and mix it into the streusel topping, then spread the streusel evenly over the top crust.
  6. Bake: Bake in the preheated oven for 35 minutes, or until the top is golden brown.
  7. Cool and chill: Remove from the oven and allow to cool completely. Refrigerate for at least 1 hour or overnight to let the filling set firmly for easier slicing.
  8. Serve: Slice into bars and serve. Bars can be enjoyed warm for a creamier texture or chilled for a firmer slice.
