  • 6 oz prosciutto (two 3 oz packages), thicker sliced
  • 4 oz lemon chevre, softened to room temperature
  • 1/2 cup fig preserves
  • 2 cups arugula

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Fresh cracked black pepper, to taste


Instructions

  1. Prepare the Prosciutto: Slice each piece of prosciutto in half lengthwise and lay the slices flat on a cutting board.
  2. Spread the Cheese: Spread about one teaspoon of softened lemon chevre on the rounded top portion of each prosciutto slice, using an upward arc motion to cover the surface evenly.
  3. Add Fig Preserves: Spread approximately half a teaspoon of fig preserves over the goat cheese layer on each slice.
  4. Place Arugula: Add a few fresh arugula leaves on top of the fig preserves layer.
  5. Dress the Arugula: In a small bowl, whisk together the extra virgin olive oil and fresh lemon juice. Drizzle this dressing evenly over the arugula on each slice.
  6. Season: Sprinkle fresh cracked black pepper over the arugula and toppings to taste.
  7. Roll Up: Starting from the bottom, carefully roll up each prosciutto slice to encase the filling and create a neat roll up.
  8. Serve or Store: Arrange the roll ups on a serving platter to serve immediately or refrigerate until ready to serve.
