Scale
Dough Ingredients
- 3/4 cup warm whole milk
- 2 1/4 teaspoons yeast
- 2 tablespoons honey
- 3 large eggs
- 3 1/2 – 4 cups all-purpose flour, plus more for rolling
- 1 teaspoon kosher salt
Cheese and Herb Filling
- 2 cups shredded cheddar
- 1 cup shredded mozzarella
- 1/4 cup freshly grated parmesan cheese
- 1/3 cup chopped Italian herbs such as sage, oregano, basil, and thyme
- 2 cloves garlic, grated
Instructions
- Activate Yeast: In the bowl of a stand mixer fitted with the dough hook, combine warm milk, yeast, and honey. Let sit for 5-10 minutes, until the mixture is bubbly on top.
- Make Dough: Add the eggs, 3 1/2 cups of flour, and kosher salt to the yeast mixture. Mix with the dough hook on medium speed for about 4-5 minutes until the flour is fully incorporated. If the dough remains sticky, gradually add the remaining flour until the dough feels smooth to the touch.
- First Rise: Cover the bowl with plastic wrap and allow the dough to rise at room temperature for 1 hour or until it doubles in size.
- Prepare Filling: In a separate bowl, mix together shredded cheddar, shredded mozzarella, grated parmesan, chopped Italian herbs, and grated garlic thoroughly.
- Shape Dough and Add Filling: Punch down the dough and roll it out on a lightly floured surface into a 12 x 18 inch rectangle. Spread the cheese and herb mixture evenly over the dough. Starting from the long edge closest to you, roll the dough tightly into a log. Pinch the seam to seal.
- Slice and Twist: Using a sharp knife, cut the log lengthwise in half, leaving one small portion at one end intact. Turn the halves outward to expose the filling. Cross and twist the two dough ropes repeatedly to create a long twisted dough.
- Form Bread Ring: Coil the twisted dough into a circular shape. Transfer carefully onto a parchment-lined baking sheet. Cover and let it rest for 15 minutes.
- Bake: Preheat the oven to 350 degrees Fahrenheit. Bake the bread for 30-35 minutes until the top is golden brown and cooked through.
- Serve: Slice and serve warm for the best flavor and texture.
Notes
- Adding flour gradually helps achieve the perfect dough consistency without making it too dry.
- Substitute Italian herbs with your favorites like rosemary or parsley if desired.
- Use freshly grated garlic for a more pronounced flavor compared to pre-minced garlic.
- Letting the bread cool slightly before cutting will prevent the cheese from oozing excessively.
- This bread freezes well; wrap tightly and thaw before reheating.
