Description

A delicious and easy Grilled Chicken Caprese recipe featuring juicy, seasoned chicken breasts topped with melted mozzarella, fresh tomato, and basil, finished with a sweet and tangy homemade balsamic reduction.

Ingredients

Scale

Chicken and Toppings

  • 4 chicken breasts
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 4 slices mozzarella cheese
  • 4 slices tomato
  • 2 tablespoons fresh basil, sliced

Balsamic Reduction

  • 1/2 cup balsamic vinegar
  • 2 tablespoons light brown sugar

Instructions

  1. Preheat the Grill: Preheat your grill to medium-high heat to prepare for cooking the chicken breasts evenly.
  2. Season the Chicken: In a small bowl, combine Italian seasoning, garlic powder, onion powder, salt, and pepper. Rub this seasoning mix evenly over both sides of the chicken breasts.
  3. Grill the Chicken: Spray the grill grates with non-stick cooking spray to prevent sticking. Place the seasoned chicken breasts on the grill and cook until they are almost fully cooked, approximately 6-8 minutes per side depending on thickness.
  4. Add Mozzarella and Melt: Place a slice of mozzarella cheese on each chicken breast. Close the grill lid and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
  5. Prepare Balsamic Reduction: While the chicken is grilling, combine balsamic vinegar and light brown sugar in a small saucepan over medium heat. Simmer for 10 minutes or until the mixture is reduced by half and has thickened to a syrupy consistency. Keep warm.
  6. Finish and Serve: Remove the chicken from the grill and top each piece with a slice of tomato and fresh basil. Drizzle generously with the warm balsamic reduction. Serve immediately and enjoy your flavorful Grilled Chicken Caprese!

Notes

  • Use boneless, skinless chicken breasts for even cooking and easy grilling.
  • Adjust seasoning to your taste; add extra garlic powder or Italian herbs if desired.
  • Keep the grill lid closed as much as possible to maintain heat and melt the cheese properly.
  • For a thicker balsamic glaze, you can simmer the reduction a few minutes longer, but watch carefully to avoid burning.
  • If you don’t have a grill, this recipe can also be made using a grill pan on the stovetop.
  • Serve with a side salad or crusty bread for a complete meal.
