Chicken and Toppings
- 4 chicken breasts
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder

- 4 slices mozzarella cheese
- 4 slices tomato
- 2 tablespoons fresh basil, sliced
Balsamic Reduction
- 1/2 cup balsamic vinegar
- 2 tablespoons light brown sugar
Instructions
- Preheat the Grill: Preheat your grill to medium-high heat to prepare for cooking the chicken breasts evenly.
- Season the Chicken: In a small bowl, combine Italian seasoning, garlic powder, onion powder, salt, and pepper. Rub this seasoning mix evenly over both sides of the chicken breasts.
- Grill the Chicken: Spray the grill grates with non-stick cooking spray to prevent sticking. Place the seasoned chicken breasts on the grill and cook until they are almost fully cooked, approximately 6-8 minutes per side depending on thickness.
- Add Mozzarella and Melt: Place a slice of mozzarella cheese on each chicken breast. Close the grill lid and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
- Prepare Balsamic Reduction: While the chicken is grilling, combine balsamic vinegar and light brown sugar in a small saucepan over medium heat. Simmer for 10 minutes or until the mixture is reduced by half and has thickened to a syrupy consistency. Keep warm.
