Brownie Batter
- 2/3 cup butter
- 1/4 cup vegetable oil
- 1 cup granulated sugar
- 1/3 cup brown sugar
- 2/3 cup cocoa powder
- 2 cold eggs
- 1 tsp vanilla extract

- 1/2 cup all purpose flour

- 15 Oreos
- 5 Oreos, crushed for topping
Instructions
- Preheat Oven and Prepare Pan: Preheat the oven to 350F and line an 8×8 inch baking pan with parchment paper. Set aside for later use.
- Melt Butter, Oil, and Sugars: In a microwave-safe bowl, combine the butter, vegetable oil, granulated sugar, and brown sugar. Microwave in 30-second intervals, stirring in between, until fully melted. Microwave for an additional 1 minute and stir vigorously to fully dissolve the sugar. Using a hand or stand mixer here is best.
- Add Eggs and Vanilla: Whisk the cold eggs into the melted mixture one at a time, then add the vanilla extract. Mix until the batter pulls away slightly from the sides of the bowl.
- Add Dry Ingredients: Fold in the all-purpose flour, cocoa powder, and salt gently just until combined without overmixing.
- Assemble Brownies with Oreos: Pour half of the brownie batter into the prepared baking pan and spread evenly. Place 15 Oreos evenly in the center of the batter. Top with the remaining brownie batter, spreading to cover the Oreos completely.
- Add Crushed Oreo Topping: Sprinkle the 5 crushed Oreos evenly over the top of the final batter layer.
- Bake: Bake in the preheated oven for 30 minutes until set and a toothpick inserted near the center comes out with a few moist crumbs.
- Cool and Serve: Remove brownies from the oven and allow them to cool fully on a wire rack. Once cooled, slice into squares to serve with a perfect crinkle top every time.
