- Cream butter and sugars: In a medium bowl, combine the slightly softened butter, brown sugar, and granulated sugar. Cream together until smooth and fluffy.
- Add egg and vanilla: Mix in the egg and vanilla extract until fully incorporated and the mixture is smooth.
- Combine dry ingredients: Add the flour, corn starch, baking soda, and salt to the wet ingredients. Stir just until the dough comes together; do not overmix.
- Fold in chocolate chips and sprinkles: Gently fold the semi sweet chocolate chips and Halloween sprinkles into the dough to distribute evenly.
- Form cookies with Oreo center: Using a large cookie scoop (about 1/4 cup), scoop out dough and flatten it in your palm. Place one Halloween Oreo in the center, then fold the dough around it, rolling to seal completely.
- Arrange on baking sheet: Place each dough ball seam side down on the prepared baking sheet, spacing them evenly.
- Bake cookies: Bake in the preheated oven for 10 minutes. The cookies may look underdone or gooey in the center, which is desired for a soft texture.
