Description

Delicious and easy-to-make egg bites that are better than Starbucks, packed with cheese, vegetables, and optional meats for a protein-rich breakfast or snack.

Egg Mixture

  • 10 eggs
  • 0.5 cup milk or cream
  • Salt and pepper to taste

Fillings

  • 1 cup shredded cheddar cheese
  • 0.5 cup chopped vegetables (bell peppers, tomatoes, onions)
  • 0.5 cup cooked crumbled bacon or sausage (optional)
  • 0.5 cup chopped turkey (optional)

Instructions

  1. Preheat oven. Set your oven to 350°F (175°C) and allow it to fully preheat before baking.
  2. Prepare muffin tin. Generously spray a muffin tin with non-stick cooking spray to prevent sticking while baking.
  3. Prep fillings. Chop vegetables and precook bacon or sausage if using; then chop into bite-sized pieces.
  4. Mix egg base. In a medium bowl, whisk together eggs, milk or cream, salt, and pepper until fully combined and frothy, like scrambled eggs.
  5. Assemble egg bites. Place a handful of chopped vegetables, meat, and cheese into each muffin cup.
  6. Add egg mixture. Carefully pour or spoon the egg mixture into each muffin cup, filling about three-quarters full.
  7. Mix ingredients in cups. Use a fork to gently stir each muffin cavity to evenly distribute ingredients in the egg mixture.
  8. Bake egg bites. Bake in the preheated oven for 18 minutes or until the egg bites are set in the middle and slightly golden on top.
  9. Cool and remove. Let the egg bites cool for a few minutes, then use a butter knife or spatula to gently loosen and remove them from the tin.
  10. Serve and store. Serve warm. Store leftovers in the refrigerator up to 4 days or freeze up to 2 months. Reheat in the microwave for 10 seconds before eating.
