Instructions

  1. Prepare Strawberries: Wash, de-stem, and slice the fresh strawberries in half or quarters. Reserve half of the sliced strawberries in a mixing bowl to use later in the glaze.
  2. Puree Strawberries: Place the remaining half of the strawberries in a blender or food processor and blend until fully pureed, ensuring a smooth consistency.
  3. Combine Ingredients and Cook: Pour the strawberry puree, sugar, lemon juice, and cornstarch into a saucepan. Mix thoroughly to combine all ingredients. Heat over medium-high heat until it reaches a gentle boil, then reduce the heat to low-medium and continue cooking until the mixture thickens. This usually takes a few minutes. Test by dipping a spoon into the glaze; if the back remains coated with glaze, it’s ready.
  4. Add Vanilla and Strain: Remove the saucepan from heat and stir in the vanilla extract until well incorporated. Pour the hot strawberry glaze through a mesh strainer into the bowl with the reserved fresh strawberries to remove any seeds or pulp, then stir well to coat the berries evenly.
  5. Cool and Store: Allow the glazed strawberries to cool to room temperature or chill before using as a topping. Store any leftovers in an airtight container in the refrigerator for 3 to 4 days.
