  • 2 bananas, sliced (optional)

Honey Lime Dressing

  • 1/4 cup honey
  • 2 tsp lime zest (zest of 2 medium limes)
  • 1 1/2 Tbsp fresh lime juice


Instructions

  1. Prepare the Fruit: Add all the chopped fruit except the bananas to a large mixing bowl, ensuring they are evenly sized for a balanced texture.
  2. Make the Dressing: In a small mixing bowl, whisk together the honey, lime zest, and fresh lime juice until smooth and well combined.
  3. Toss Fruit and Dressing: Pour the honey lime dressing over the fruit and gently toss to evenly coat all the pieces. Add sliced bananas if using, and toss carefully to avoid mashing.
  4. Serve Immediately: Serve the salad right away to enjoy the fresh flavors and vibrant colors at their best. Alternatively, prepare fruit and dressing separately up to one day in advance and combine just before serving.

Notes

  • Fresh mandarin oranges are preferred, but a 15 oz can of mandarin oranges in juice or light syrup drained well can be used as a substitute.
  • The salad can be made a day in advance by chopping the fruit (except bananas) and keeping the dressing chilled separately; mix together just before serving to maintain freshness.
  • Bananas are optional and should be added last to prevent browning.
