Instructions

  2. Assemble the quesadillas: Lay one flour tortilla flat on a clean surface. Spoon one-fourth of the filling mixture onto half of the tortilla, then fold the other half over to cover the filling completely, forming a half-moon shape.
  3. Heat the skillet: Place a non-stick skillet over medium heat and add the tablespoon of olive oil. Allow the oil to warm but not smoke.
  4. Cook the quesadilla: Place the folded tortilla with filling into the hot skillet. Cook for 4 minutes or until the bottom is golden brown and crispy.
  5. Flip and finish cooking: Carefully flip the quesadilla using a spatula, and cook the other side for another 4 minutes until it is also golden and the cheese inside is melted.
