This One Pot Bacon Cheeseburger Rice is a delicious and easy dinner recipe combining the flavors of a classic bacon cheeseburger with tender rice, all cooked in a single pot for convenience. Crispy bacon, seasoned ground beef, savory tomato sauce, and melted sharp cheddar cheese create a comforting, cheesy, and satisfying meal perfect for any weeknight.

Ingredients

Units Scale

Meat & Bacon

  • 6-8 slices bacon, chopped
  • 1 lb ground beef

Vegetables & Aromatics

  • 1 small onion, diced
  • 3-4 garlic cloves, minced

Seasonings & Sauces

  • 1 tbsp Kinder’s Caramelized Onion Burger Seasoning or any favorite burger seasoning
  • 2 tsps Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tbsp dill pickle relish
  • 1 tsp yellow or Dijon mustard
  • 8 oz can of tomato sauce

Grains & Broth

  • 1 cup uncooked long grain white rice (Jasmine rice used)
  • 2 1/4 cups beef broth

Cheese

  • 2 cups shredded sharp cheddar cheese or preferred cheese flavor for burgers

Instructions

  1. Cook the bacon: In a large pot over medium heat, cook the chopped bacon until crispy. Once cooked, remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate to drain.
  2. Cook beef and aromatics: Leave about 1 teaspoon of the bacon grease in the pot. Add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are softened. Drain excess grease carefully.
  3. Add seasonings: Stir in the garlic, Kinder’s Caramelized Onion Burger Seasoning, and Worcestershire sauce. Cook for 1 to 2 minutes to let the flavors meld.
  4. Incorporate tomato paste: Add the tomato paste to the pot and cook for another 1 to 2 minutes, stirring frequently.
  5. Mix in remaining sauces: Stir in the dill pickle relish, mustard, and tomato sauce until well combined.
  6. Add rice and broth: Pour in the uncooked rice and beef broth. Stir everything together, bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20 minutes or until the rice is tender and has absorbed the liquid.
  7. Finish with cheese and bacon: Remove the pot from heat. Stir in 1 cup of shredded cheddar cheese and the reserved crispy bacon. Sprinkle the remaining cheese on top, cover again, and let it sit for 3 to 5 minutes to melt the cheese thoroughly.
  8. Serve: Serve the cheesy bacon cheeseburger rice hot and enjoy a comforting and flavorful meal.

Notes

  • For some heat, add chopped jalapeños or a dash of hot sauce to the beef mixture.
  • Substitute ground turkey or chicken if you prefer a lighter protein option.
  • Add mushrooms, bell peppers, or other vegetables to enhance flavor and nutrition.
  • Leftovers store well in an airtight container in the refrigerator for up to 4 days and reheat with a splash of broth for moisture.
  • Freeze leftovers in portions for up to 2 months and thaw before reheating.
  • This recipe is perfect for make-ahead meals and freezer-friendly dinners.
