Description

Cornflake Candy is a sweet, crunchy treat made by combining corn flakes with a peanut butter and sugar syrup mixture. This easy-to-make no-bake candy is perfect for quick dessert cravings and can be prepared in under 20 minutes.

Ingredients

Scale

Main Ingredients

  • 5 cups corn flakes
  • 1 cup corn syrup
  • 1 cup granulated sugar
  • 1 cup peanut butter (smooth or chunky)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Prepare the surface. Lightly spray a baking sheet or cover it with parchment paper or non-stick aluminum foil to prevent sticking.
  2. Measure the corn flakes. Set aside 5 cups of corn flakes to use later in the recipe.
  3. Heat the syrup mixture. Combine 1 cup corn syrup and 1 cup granulated sugar in a small saucepan over medium-low heat, stirring occasionally until the sugar has completely melted.
  4. Add peanut butter and vanilla. Stir in 1 cup peanut butter and 1 teaspoon vanilla extract (if using) until the peanut butter has melted and the mixture is smooth.
  5. Mix in corn flakes. Turn off the heat but keep the pot on the burner. Quickly add the corn flakes and stir rapidly to coat them evenly before the mixture cools and hardens.
  6. Form candies. Lightly spray two spoons or a cookie scoop with baking spray and drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Cool completely. Let the candies cool at room temperature until fully set before storing.
  8. Store properly. Keep the candies in an airtight container for freshness.

Notes

  • Measure out all ingredients and prepare your working surface before beginning to cook.
  • Spray measuring utensils with baking spray before scooping sticky ingredients for easier cleanup.
  • If the mixture begins to harden too quickly, keep the pot on very low heat to allow more time for forming candies.
  • To clean the pan, scrape off as much cooled mixture as possible and soak in hot water for 10-15 minutes before washing.
  • Add sprinkles or jimmies immediately after dropping each candy to ensure they stick well.
  • Store candies between sheets of plastic wrap, wax paper, or parchment paper in an airtight container to prevent sticking.
