Description

A delicious and easy Pickle Grilled Cheese Sandwich featuring melted cheddar cheese, tangy kosher dill pickles, and a hint of dried dill, all grilled to golden perfection. Optional hot sauce adds a spicy kick for extra flavor.

Ingredients

Scale

Bread and Butter

  • 2 to 3 tablespoons butter
  • 4 slices sandwich bread (like sourdough)

Filling

  • 4 ounces shredded cheddar cheese (about 1 cup), divided
  • 2 kosher dill pickles, thinly sliced and patted dry
  • Pinch dried dill (dill weed)
  • 1 tablespoon hot sauce, optional (such as Sriracha)

Instructions

  1. Butter the Bread: Spread the butter evenly among the 4 slices of bread on both sides, adjusting the amount based on your preference and bread size.
  2. Assemble the Sandwiches: On two slices of bread, add half of the shredded cheddar cheese (2 ounces or ½ cup). Sprinkle a pinch of dried dill over the cheese, then layer the sliced pickles on top. Drizzle with hot sauce if using. Finish with the remaining cheddar cheese (2 ounces or ½ cup).
  3. Complete the Sandwich: Place the remaining two slices of bread on top to form two sandwiches.
  4. Preheat the Skillet: Heat a 10-inch or 12-inch cast-iron skillet over medium-low to medium heat.
  5. Cook the Sandwiches: Place sandwiches in the skillet and cook for about 3 to 4 minutes on one side, watching carefully to avoid burning while achieving a golden brown and crispy exterior with melted cheese inside.
  6. Flip and Finish Cooking: Carefully flip the sandwiches and cook for another 3 to 4 minutes until the other side is also golden brown and the cheese is melted.
  7. Serve: Remove from heat and enjoy your pickle grilled cheese sandwiches warm.

Notes

  • Medium cheddar cheese is recommended, but you can substitute with Gouda, mozzarella, or provolone for different flavors as long as it melts well.
  • Pat pickles dry thoroughly to prevent soggy grilled sandwiches.
  • Maintain a moderate heat to ensure sandwiches brown nicely without burning, allowing cheese to melt perfectly.
  • Prep and cook times are approximate and may vary depending on your appliances.
