Description

This Protein Cookie Dough recipe is a delicious, healthy treat made with almond flour, vanilla protein powder, and peanut butter. It’s perfect to enjoy as a quick snack or dessert, offering a boost of protein and rich flavors without baking.

Ingredients

Scale

Dry Ingredients

  • 1 cup almond flour
  • ½ cup vanilla protein powder

Wet Ingredients

  • ¼ cup unsalted creamy peanut butter
  • ¼ cup maple syrup
  • ¼ cup non-dairy milk (more as needed)
  • 1 teaspoon vanilla extract

Add-ins

  • ⅔ cup chocolate chips

Instructions

  1. Combine dry ingredients: Whisk together the almond flour and vanilla protein powder in a mixing bowl until well combined.
  2. Melt peanut butter: Place the unsalted creamy peanut butter in a microwave-safe bowl and heat for about 20 seconds until slightly melted and easier to mix.
  3. Mix wet and dry ingredients: Add the melted peanut butter, maple syrup, non-dairy milk, and vanilla extract to the dry mixture. Use a rubber spatula to mix everything together until fully combined. Add 1 to 2 tablespoons more non-dairy milk if needed to reach a dough-like consistency.
  4. Fold in chocolate chips: Gently fold the chocolate chips into the dough until evenly distributed.
  5. Form and store: Enjoy the cookie dough as is or roll it into balls. Store in the refrigerator for best texture and freshness.

Notes

  • Use vanilla pea protein for a plant-based option or vanilla whey protein if preferred. Stevia-sweetened protein powders are recommended.
  • Any nut or seed butter can be substituted for peanut butter, though peanut butter adds great flavor.
  • If the dough is too dry, add more non-dairy milk by tablespoon increments until desired consistency.
  • For a firmer treat, refrigerate rolled balls for at least 30 minutes before serving.
