Ingredients
Scale
Dry Ingredients
- 1 cup almond flour
- ½ cup vanilla protein powder
Wet Ingredients
- ¼ cup unsalted creamy peanut butter
- ¼ cup maple syrup
- ¼ cup non-dairy milk (more as needed)
- 1 teaspoon vanilla extract
Add-ins
- ⅔ cup chocolate chips
Instructions
- Combine dry ingredients: Whisk together the almond flour and vanilla protein powder in a mixing bowl until well combined.
- Melt peanut butter: Place the unsalted creamy peanut butter in a microwave-safe bowl and heat for about 20 seconds until slightly melted and easier to mix.
- Mix wet and dry ingredients: Add the melted peanut butter, maple syrup, non-dairy milk, and vanilla extract to the dry mixture. Use a rubber spatula to mix everything together until fully combined. Add 1 to 2 tablespoons more non-dairy milk if needed to reach a dough-like consistency.
- Fold in chocolate chips: Gently fold the chocolate chips into the dough until evenly distributed.
- Form and store: Enjoy the cookie dough as is or roll it into balls. Store in the refrigerator for best texture and freshness.
Notes
- Use vanilla pea protein for a plant-based option or vanilla whey protein if preferred. Stevia-sweetened protein powders are recommended.
- Any nut or seed butter can be substituted for peanut butter, though peanut butter adds great flavor.
- If the dough is too dry, add more non-dairy milk by tablespoon increments until desired consistency.
- For a firmer treat, refrigerate rolled balls for at least 30 minutes before serving.
