Description

  • 2 large sweet potatoes peeled and cubed
  • 1 large yellow onion sliced
  • 3 cloves garlic chopped

  • 16 oz. smoked (or otherwise pre-cooked) sausage cut into 1-inch slices (such as andouille, kielbasa, or other preferred sausage)

Seasoning & Oils

  • 2-3 tablespoons extra-virgin olive oil or other cooking oil
  • 1-2 teaspoons seasoning of choice (such as chicken, pork, steak seasoning, Greek seasoning, taco seasoning, or salt and pepper)


Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for roasting the ingredients.
  2. Toss Vegetables and Season: Add the cubed sweet potatoes, sliced onion, and chopped garlic to a sheet pan. Drizzle with 2 tablespoons of olive oil and sprinkle 1-2 teaspoons of your chosen seasoning over the top. Toss everything together until evenly coated, then spread out the mixture evenly on the pan.
  3. First Roasting: Roast the vegetables in the oven for 20 minutes to begin softening and browning the sweet potatoes and onions.
  4. Stir and Continue Roasting: Remove the sheet pan from the oven, stir the vegetables with a metal spatula to redistribute, and spread them out evenly again. Roast for an additional 15 minutes.
  5. Add Sausage: Remove the pan, stir again, then add the sliced sausage in between the vegetables, making sure the flat cut sides of the sausage touch the hot sheet pan for proper browning.
  6. Final Roasting: Roast everything together for another 10 minutes until the sausage is nicely browned and heated through.
  7. Serve: Remove from oven and serve hot. Enjoy your hearty, flavorful sheet pan meal!

Notes

  • You can use any seasoning you like, including chicken, pork, steak, Greek, taco seasoning, or just salt and pepper. Adjust salt according to your seasoning’s salt content.
  • Use pre-cooked sausage varieties such as smoked sausage, kielbasa, chicken, turkey, or vegetarian sausage substitutes depending on preference.
  • To avoid burning garlic and onions, slice the onions rather than dicing and chop the garlic instead of slivering. You can also reduce oven temperature if ingredients cook too fast.
  • Do not skimp on oil; at least 2 tablespoons of olive oil are necessary to prevent dryness and burning.
  • Leftovers keep well for 2-3 days refrigerated and reheat beautifully, making a great breakfast addition with eggs.
