Description

Delightfully spiced gingerbread cookie bars combining warm cinnamon, ginger, and molasses flavors into a soft, slightly gooey treat perfect for holiday celebrations or cozy snacks.

Ingredients

Scale

Main Ingredients

  • 1/2 cup butter melted
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon vanilla
  • 1/3 cup molasses
  • 1 egg
  • 2 teaspoons baking soda
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven: Preheat the oven to 350 degrees Fahrenheit to prepare for baking.
  2. Prepare the pan: Spray a 9×13 inch baking pan with non-stick cooking spray and set it aside.
  3. Mix wet ingredients: In a large bowl, combine melted butter, white sugar, brown sugar, vanilla extract, and molasses. Beat the mixture until creamy and smooth, about 1 to 2 minutes. Using a stand mixer works best as the batter gets thick.
  4. Add egg: Add the egg to the mixture and stir until fully incorporated.
  5. Add dry ingredients: Add baking soda, flour, cinnamon, ground ginger, allspice, nutmeg, and salt to the wet mixture. Mix well until a thick cookie dough forms.
  6. Spread dough in pan: Using a silicone spatula or your fingers, evenly spread the thick dough into the prepared baking pan.
  7. Bake: Bake for 20 minutes. Keep an eye on the edges—they should be crispy while the center stays slightly gooey. Adjust baking time if needed based on your oven’s performance.
  8. Cool and serve: Let the gingerbread bars cool completely before optionally frosting with cream cheese or vanilla frosting and cutting into 15 squares. Add Christmas sprinkles if desired.

Notes

  • For easier mixing of the thick dough, use a stand mixer if available.
  • Oven temperatures vary, so bake longer if necessary until edges are crisp and center is slightly gooey.
  • For frosting, cream cheese or vanilla frosting pairs well with the gingerbread bars.
  • These bars can be stored in an airtight container and taste great the next day as well.
