- Mix wet ingredients: In a large bowl, combine melted butter, white sugar, brown sugar, vanilla extract, and molasses. Beat the mixture until creamy and smooth, about 1 to 2 minutes. Using a stand mixer works best as the batter gets thick.
- Add egg: Add the egg to the mixture and stir until fully incorporated.
- Add dry ingredients: Add baking soda, flour, cinnamon, ground ginger, allspice, nutmeg, and salt to the wet mixture. Mix well until a thick cookie dough forms.
- Spread dough in pan: Using a silicone spatula or your fingers, evenly spread the thick dough into the prepared baking pan.
- Bake: Bake for 20 minutes. Keep an eye on the edges—they should be crispy while the center stays slightly gooey. Adjust baking time if needed based on your oven’s performance.
- Cool and serve: Let the gingerbread bars cool completely before optionally frosting with cream cheese or vanilla frosting and cutting into 15 squares. Add Christmas sprinkles if desired.
