Slowly pour in 75% of the milk in small batches, stirring constantly to integrate fully and allow the sauce to thicken gradually. Whisk in the Dijon mustard for a tangy depth. Add the shredded cheddar and mozzarella cheeses gradually while stirring until the sauce is smooth and creamy. Thin with the remaining milk as needed to achieve the desired consistency.
