Sweet Potato Rounds

Instructions
- Preheat the oven: Set your oven to 425°F to prepare for roasting the sweet potato rounds.
- Prepare the sweet potatoes: Wash and dry the sweet potatoes thoroughly. Slice them into ⅓-inch thick rounds for even roasting.
- Coat the sweet potatoes: Drizzle olive oil onto a large rimmed baking sheet. Arrange the sweet potato rounds, ensuring they don’t touch. Turn them to coat evenly with the oil. Use a second sheet if necessary to give the potatoes space.
- Add seasoning: Sprinkle cinnamon, smoked paprika, cumin, coriander, red pepper flakes, kosher salt, and black pepper over the potatoes. Drizzle the honey on top and turn the rounds again to ensure they are evenly coated with the spices and honey.
- Roast the sweet potatoes: Place the sheet tray in the oven and bake for 20 minutes. Afterward, flip each sweet potato round and return to the oven for an additional 25 minutes or until they are golden and crispy around the edges.
- Finish and serve: Carefully transfer the roasted sweet potato rounds to a serving platter. Season with a touch more salt, drizzle with additional honey, crumble feta cheese over the top, and garnish with chopped fresh chives or parsley. Serve warm for the best flavor.
