Description

Taco Bites are the perfect party appetizer, combining flavorful taco meat, fresh shredded lettuce, cheddar cheese, and cherry tomatoes on crispy scoop chips for a bite-sized burst of deliciousness.

Ingredients

Scale

Filling

  • 1 lbs. taco meat
  • ½ cup sour cream
  • 2 cups shredded iceberg lettuce
  • ½ cup shredded cheddar cheese
  • 25 mini cherry tomatoes
  • 50 scoop chips

Instructions

  1. Prepare the Meat: Use your favorite taco meat recipe or follow the crunch wraps recipe to cook 1 lb. of taco meat thoroughly with your preferred spices.
  2. Prepare Veggies and Cheese: Shred the iceberg lettuce and cheddar cheese. Slice the mini cherry tomatoes in half.
  3. Prepare Sour Cream Piping Bag: Place the sour cream in a sandwich bag and cut off one corner to create a makeshift piping bag for easy topping.
  4. Assemble Taco Bites: Arrange scoop chips on a large platter. Spoon about ½ teaspoon of taco meat into each chip.
  5. Add Toppings: Pipe sour cream over the meat on each chip, then add a layer of shredded lettuce.
  6. Finish Each Bite: Top each taco bite with a sprinkle of shredded cheddar cheese and half a cherry tomato.

Notes

  • To save time, use pre-cooked taco meat or a store-bought taco seasoning mix.
  • For a spicier version, add chopped jalapeños or a dash of hot sauce to the meat.
  • Substitute sour cream with Greek yogurt for a healthier option.
  • Use other types of scoop chips like veggie or multigrain for different flavor and texture.
  • Assemble just before serving to keep chips crisp and avoid sogginess.
