Description

Delicious and flaky vegan sausage rolls made with puff pastry and savory Impossible sausage crumbles, perfect as a snack or appetizer for any occasion.

Filling

  • 14 ounces Impossible sausage crumbles
  • 1/2 cup vegan breadcrumbs (panko recommended)

Instructions

  1. Thaw Pastry: Set the frozen puff pastry out to thaw at room temperature for about 30 minutes while preparing the filling.
  2. Preheat Oven: Preheat your oven to 425 degrees F and line a large baking sheet with parchment paper.
  3. Prepare Filling: In a large bowl, combine the Impossible sausage crumbles and vegan breadcrumbs until well blended.
  4. Roll and Cut Pastry: On a lightly floured surface, unfold one sheet of puff pastry and gently roll it out slightly. Cut into 3 long rectangles using a pizza cutter. Repeat with the second sheet to get 6 rectangles total.
  5. Fill Pastry: Divide the sausage mixture into 6 portions. Place each portion down the center of a pastry rectangle, leaving about an inch margin on the sides and ends.
  6. Seal Rolls: Fold the pastry sides over the filling, pinching the edges to seal. Use a few tablespoons of water to help the pastry stick together if needed.
  7. Cut and Prepare For Baking: Using a large knife, cut each long roll into 2-inch pieces. Place pieces on the prepared baking sheet spaced a few inches apart. Cut slits on the top of each piece to allow steam to escape.
  8. Brush and Bake: Brush the tops with melted vegan butter for a golden finish. Bake in the preheated oven for 20 minutes or until pastry is puffed and golden brown.
