  • 12 ounce package Impossible ground beef
  • 8 ounces cremini mushrooms, sliced or chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • Salt and black pepper, to taste
  • 2 tablespoons all purpose flour or gluten free flour
  • 13.5 ounce can light coconut milk
  • 1 tablespoon vegan Worcestershire sauce
  • 1 1/2 cups frozen corn or canned
  • 1 1/2 cups frozen green beans or fresh/canned
  • 2 cups vegan cheddar cheese shreds
  • 32 ounce bag tater tots


Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees F and lightly grease a 9×13 inch casserole dish to prepare for baking.
  2. Cook Vegan Beef: In a pan over medium-high heat, cook the Impossible ground beef until cooked through, breaking it up with a spatula or wooden spoon as it browns.
  3. Sauté Mushrooms: Add the sliced mushrooms to the pan and sauté, stirring constantly, for about 5 minutes until they soften.
  4. Season: Add the ground cumin, oregano, salt, and black pepper to taste, stirring to combine the flavors.
  5. Make Sauce: Sprinkle the flour over the mixture and stir. Slowly stir in the light coconut milk and add the vegan Worcestershire sauce. Add the corn and green beans, stir well, and let the mixture simmer for 5 minutes to thicken.
  6. Assemble Casserole: Transfer the mixture to the prepared casserole dish. Sprinkle the vegan cheddar cheese shreds evenly over the top, then arrange the tater tots in a single layer on top of the cheese.
  7. Bake: Bake uncovered in the preheated oven for 40 minutes until the tater tots are golden brown and crispy.

  • Use any vegan ground beef brand like Beyond or Gardein, or soak and season TVP as a substitute.

  • Sweet potato tots can be substituted for a unique twist, especially good for holiday side dishes.
